SPELT WITH ONIONS AND OLIVES

INGREDIENTS

250 g spelt, 3 fresh onions, 1 kg green and black olives, 1/2 kg cherry tomatoes, basil, olive oil, chilli pepper.

PROCEDURE

Wash the spelt, cook it with 600 ml of cold water, when it starts to boil, lower the heat to low, salt and finish cooking until all the water is absorbed (about 25 minutes). Slice the onions and cook them with 1/2 cup of water and a little salt (about 15 minutes), stone and slice the olives, cut the cherry tomatoes, pour everything into a salad bowl and season with oil, basil and chilli pepper.
