Asparagus is a perennial herbaceous plant and can grow up to 100-150 cm in height.
It requires a lot of space in the soil, time (until the second year it is not harvested) and care for the preparation and planting of the rhizomes; the plant will bear its' fruits' (the first to appear are called shoots) ) for the next 10 years!
White asparagus is obtained thanks to the bleaching method: the shoots are covered with soil (Baulatura) in order to prevent photosynthesis; the lack of chlorophyll determines the color whitish, in this way the shoots remain softer and do not green.
