Asparagus is a perennial herbaceous plant and can grow up to 100-150 cm in height.
It requires a lot of space in the soil, time (until the second year it is not harvested) and care for the preparation and planting of the rhizomes; the plant will bear its' fruits' (the first to appear are called shoots) ) for the next 10 years!
White asparagus is obtained thanks to the bleaching method: the shoots are covered with soil (Baulatura) in order to prevent photosynthesis; the lack of chlorophyll determines the color whitish, in this way the shoots remain softer and do not green.

At the Azienda Agricola San Francesco, in Ravarino di Modena, the brothers Luca and Vainer have been practicing the biodynamic method since the early 90s. They cultivate asparagus with great passion and care at every stage of production, but they specialize above all in the cultivation of fruit trees, in particular pear trees.
