The farm is run by Michele Borgato, co-founder of Coop together with his brother Luciano. The Thames.
A very experienced and capable horticulturist, he had his first approach to the world of “organic” in the seventies.

A traditional type of agriculture continued, with low-cut animals and cows from which to obtain milk and cheese. Once the barn was abandoned, both brothers continued to cultivate the land with the organic farming method, following different paths. With Annalisa (historic collaborator of El Tamiso) she formed a large family dedicated to the company's various activities, including the store where you can find products from her land and Coop El Tamiso. Always family-run, direct sales to the “Organic Market” in Mestre and to the one in Venice. Animated by a strong sharing of the founding values of the cooperative and therefore by the deep respect for the earth and the environment that surrounds it (ecosystem), it operates in three plots in Villatora and Saonara for a total of 3.00 hectares where it cultivates most of the common vegetables and, with particular expertise: thistles, celery, fennel, lettuce, strawberries, cucumbers, marconi beans, arugula, salads, broccoli cabbage, leeks, red heart radicchi and round red.

The composition of the soil is medium-textured, suitable for the cultivation of vegetables but its ability to maintain its fertility with green manure and careful crop rotation has been great.

The company is located in Saonara, on the border between Padua and Venice, two km from the Brenta Riviera. The terms saponaria date back to the fifth and sixth centuries, from the Latin sapus, which means slippery clay soil, with which clothes were washed in those days. The land is lapped by the “Cornio” watercourse, an ancient branch of the Brenta river that flows into the lagoon, for this reason used in ancient times by the Romans for navigation with canoes. Today, the Cornio maintains its characteristic tortuosity and is essential for draining water and

for irrigation.
