M0917 - Pearlescent monococcal spelt

Monococcus spelt was produced by our partner Valerio Abbiate from Guiglia (MO). The seeds from which the production started derive from previous plantations of monococcal spelt by partner organic farms.
Spelt is the oldest wheat used by man. Its cultivation has gradually diminished over the centuries, supplanted by soft and durum wheat, due to their greater yield.
It is a plant that enters the normal agrarian rotations of our cereal members and for which for more than ten years we have been committed to implementing a careful selection of plants. The species we use are Spelt Spelt (so-called large spelt) and Monococcus spelt (or small spelt).
Monococcus spelt, much less productive than other varieties, has, in addition to all the typical nutritional values of spelt (richness in carbohydrates, dietary fibers, fine fats and B vitamins), a high content of carotenoids and a high percentage of proteins that have a particular composition in terms of peptide fractions that make it better digestible in people with mild gluten intolerance (excluding celiacs).
Nutritionists recommend it for its richness in fiber, which today is so lacking in our daily diet.
