Produced in the partner company Valerio Abbiate (Guiglia, MO).
Spelta spelt seed has been produced and selected by Valerio himself for years. Spelta, or Big Spelt, is the ancestor of soft wheat, it has a high amount of fiber and a high content of protein and therefore of gluten. The gluten molecule in spelt, however, is very weak and is therefore easily digestible.
Decortication, i.e. the mechanical removal of glumes and glumettes (the leaflets to protect the seed), leaves the seed intact in all its parts and therefore with all the nutrients.
Harvested in July 2017, it was peeled by “Agricola Grains” in Arre (PD) and packaged by “La Grande Macina” in Sermide (MN).
