The kale, the kale of our grandmothers and black cabbage are now ready in the fields of the members of the Cooperative.

In Puglia and Campania we have been eating for millennia, we have recently become infatuated with it. It's kale, otherwise known as kale. As usual, American celebrities brought it to our attention, assisted by personal trainers specialized in the classic discovery of hot water (at least at the table). It's a pity that they, compared to our grandmothers who have always used it, have been able to sell kale to the public much better than
us.
Kale is a vegetable that grows during the winter months and comes to our body's rescue at the change of season. Vitamins A, B6, C and K strengthen the immune and cardiovascular systems. In short, kale is a real superfood. But be careful not to confuse it with black cabbage, typical of Tuscan soups, the now famous Ribollita. The kale leaf is crepe, it exists both red and green. Kale has a leaf with bubbles.

Many do not know that you have to wait for the first cold to get the best taste and quality, for the simple reason that even these plants, to prepare for the cold, increase the density of their leaf liquids. And they do it simply by moving sugars from the roots to the leaves, hence the more pleasant taste

Uses of kale in cooking

At the time of purchase, make sure that the leaves are whole and fleshy, with a well-pronounced rib, to be removed before cooking: just engrave it on the sides. You can use kale for a lot of recipes. For example, crispy baked chips, prepared by breaking the leaves into small parts; season them with a drizzle of oil and cook them in the oven at 190 °C. You can use kale to create healthy side dishes, but also to fill rustic cakes and omelettes. You can eat the leaves raw, chopped even in salads, with the addition of nuts and raisins. Finally, it can be used for extracts and smoothies: in this way you will assimilate the main nutrients without losing them during cooking. In any case, always make sure that it has been cultivated according to the principles of organic farming
