RICE WITH FAVETTE BEANS WITH SAUCE

INGREDIENTS

300 grams of rice (any variety), 1 kg of fresh fava beans, tomato puree, 1 onion or 1 clove of garlic, extra virgin olive oil, salt, oregano, grated pecorino cheese.

PROCEDURE

Remove the pods from the fava beans. Peel the larger beans and keep the small ones intact. Cook over low heat, with 2 glasses of water, for 15/20 minutes. Flavor the tomato puree with a sauté of onion, or by inserting the minced garlic, add the previously cooked fava beans, salt and finish cooking for another 10 minutes, if the sauce dries too much, add some water. Boil the rice and season it with the favette beans with sauce, a crumbled oregano and possibly pecorino cheese.
