PROCEDURE

Wash and place everything in a pot. Cover with cold water and cook with a covered pot. Boil 5-10 minutes and turn off. After about 15 minutes, filter the liquid part and keep it aside. The entire vegetable part, on the other hand, must be passed through a vegetable mill... obtaining a “cream” that will be used to season pasta and risotto or other delicious preparations.
