INGREDIENTS

n. 3 fresh white and red onions, n. 3 carrots, n. 2 zucchini, a liter and a half of water, 1/2 cup of vinegar, a tablespoon of sugar, a bay leaf, salt.

PROCEDURE

Boil the water, when it boils, add the salt, bay leaves, sugar and vinegar. At this point, sear the vegetables in this sequence: the carrots cut into not too thin rings, after two minutes (after the water boils again) the roughly sliced onions and, after two minutes, the zucchini in rings. Boil for 3 more minutes. Drain everything and transfer to a serving plate. Drizzle with extra virgin olive oil.
