CHICORY MEATBALLS

INGREDIENTS

gr. 200 red chicory of any variety, gr. 100 old bread, 100 grams breadcrumbs, 2 whole eggs, 2 tablespoons of grated Parmesan cheese, salt, parsley, garlic (chilli pepper), a glass of milk -including vegetable-.

PROCEDURE

Place the old bread in cold milk for 30 minutes. Wash and dry the chicory, cut it very small with a crescent or with a blender -but without making it into a pulp-. Chop the garlic and parsley. Squeeze the bread out of the milk, add the chicory, the beaten eggs, the Parmesan cheese, the salt and also the minced garlic and parsley. Work all the ingredients well. Add the breadcrumbs and finish kneading. With your hands always a little wet, form meatballs a little bigger than a walnut. Pass them in a pan greased with a little oil, turning them from time to time until a crispy crust forms. Serve warm.
