We publish a letter from the president of the El Tamiso Cooperative - Franco Zecchinato - aimed at stimulating the consumption of local cereals from organic farming that underlines the Cooperative's commitment to the supply chain of this important production.
Dear restaurateur (s),
local, natural, vegan and vegetarian, organic... we wanted to point out to you the concrete possibility of finding “raw materials” in the offer of our Agricultural Cooperative, about which a lot is talked about, but often little is done to give concrete perspective to their local production.
We are referring to
- so-called “ancient” soft grains - also available in packs of 5 kg
- Spelt and monococcus spelt with spelt - pearly or hulled spelt, even in bulk; the monococcus 1st harvest 2013
- to some traditional varieties of barley - pearl even in bulk
- “Marano” and “Biancoperla” corn (or in any case vitreous not artificially hybridized) - only flours for 2013 (2012 year to forget because of the climate...)
- Per mile - in the third year of reintroduction, favored by climate change - hulled even in bulk
- Buckwheat - 1st trial 2013
- sorghum - zootechnical use - 1st trial 2013
- To pea protein - zootechnical use
All things that even our members are committed to producing and the Cooperative to translating into “concrete” facts, as our custom and purpose.
Obviously we are not alone, on the contrary: we could mention, certainly forgetting many, the newly established “SHORT ORGANIC SUPPLY CHAIN OF ANCIENT CEREALS”; THE PEASANT CIVILIZATION ASSOCIATION; the beautiful experience of CULTIVATING BY SHARING, especially in the Belluno area - all subjects with whom it will be necessary to collaborate.
For some of the cereals mentioned, we also have seeds, self-produced and selected, even with all the well-known, and sad, limits of current international standards.
For most of the processes following production (decortication, pearlation, etc. etc.) we rely on our historic partners: the Cooperativa La Terra e il Cielo, from Arcevia AN; and Molino F.lli Zapparoli, from Sermide MN and more recently Antonella Romano's company, in Perugia.
Obviously our production is only organic, a journey that we have been taking for almost 30 years.
Some of our associated companies have been experimenting for some time, in particular the LA COSTIGLIOLA farm, run by Rovolon PD - a project of Banca Etica, also shared with EL TAMISO.
With valuable support from the Institute of Genetics and Agricultural Experimentation “N. Strampelli” in Lonigo VI.
But why do we ask for your 'help'?
Because we find that on the use of these cereals, although increasingly requested and appreciated by people, it is often discovered that it benefits commercial supply chains, where the starting raw material has nothing to do with our territory, our “real” economy and not even with our country.
Then we know all the problems related to the price - sometimes really too “low” for the basic producer - and to the service - the famous minimum orders, the free port, etc. etc.
But we are also certain that without an effort to share a common path, we will hardly be able to give credible answers to our end user citizen, who is increasingly interested in the origin and quality of food and the environment.
We therefore invite you to use our organic cereals, offering all the necessary collaboration.
