Produced at the partner farm Dino De Lazzari (Country, TV).
Agordino Barley is a traditional variety from the mountain area with interesting organoleptic qualities but with a much lower production yield than the varieties on the market. We started with this old variety in 2013 from a handful of seeds supplied to us by the Strampelli Institute in Lonigo. It was harvested at the end of June 2017 after a good year despite very late planting and winter drought. The oldest varieties normally have a more developed root system than the modern ones, and therefore able to absorb water and nutrients deeper into the soil.
After collection and storage at our cooperative, it was pearled and packaged by “The Earth and the Sky” in Arcevia (AN).
It does not require soaking but it is recommended, as with all cereal grains, to rinse before cooking.
