CONTEXT AND PROCESSING
The area of Villarroboledo (Albacete), is a plain mainly occupied by industrial agriculture, and the Manà farm, which practices organic agriculture, stands out in this landscape.
The processing begins with the harvest through the use of machines called “shakers” (the same used to harvest olives). The fruit is then selected in water (to distinguish full fruits from empty ones), then dried within 48 hours at 38°, so as to preserve the richness of essential fatty acids and prevent the oxidation of polyunsaturated fatty acids.
