The variety is “SULTANO” is the traditional variety of the Tuscan-Emilian Apennines, and it has a smaller and less productive grain than other varieties found on the market and that are often imported from abroad. The method of selecting these legumes is absolutely artisanal, so it is not possible to guarantee the total purity of the product due to the presence of any grains of soil; it is therefore always advisable to rinse the product in running water in addition to soaking for at least six hours or all night before cooking.
