Renato Maggiolo, after retiring, together with his brothers Matteo and Graziano, decided to take care of the plot left as a legacy by his mother,
adopting not only the organic cultivation method, but a more holistic vision. Everything on the Maggiolo family farm speaks of
beauty,
harmony, love and
respect.
From the outset, the goal of this new project is to create a
vegetable garden based on the principles of territoriality, biodiversity, the beauty of the landscape and the healthiness of the fruits, in perfect harmony with nature.
Long hedges composed of hundreds of shrubs of 47 different varieties, carefully designed to be a receptacle for some insect, become not only a protective barrier but real natural habitats where every living being finds food, without attacking crops. The principle is simple:
plant biodiversity as a premise of animal
biodiversity.
The farm consists of 2 hectares of vegetable garden, with more than fifty varieties of different vegetables and about fifty aromatic and medicinal herbs, an educational farm, a self-managed business store, with fresh and processed self-produced products, and a vegan farm. The water used for irrigation systems, strictly drip, is drawn from the
pond on the farm. The water basin acts as a
phytopurification plant, thanks to the insertion of reeds that absorb the pollutants present in the water of the Adige river. The pond is also the habitat of various birds and fish.
The
restaurant uses everything that the Garden offers: ingredients of exclusively vegetable and organic origin, with natural cooking techniques and without waste, thanks to the skill of chef Giada Bozzolan and her staff.
